α-Glucosidase Inhibitors from Cold-Pressed Black Sesame (Sesamum indicum) Meal: Characterization of New Furofuran Lignans, Kinetic Study, and In Vitro Gastrointestinal Digestion

Cold-pressed black sesame (Sesamum indicum) meal is obtained on an industrial scale after oil removal. Most furofuran lignans were identified using α-glucosidase assay-guided isolation. Five new compounds were investigated. In addition, evaluation of α-glucosidase inhibitory effects, kinetic studies, and gastrointestinal digestion were studied.
